As the name suggests, Must is a wine bar, with an extensive list of well picked drops including a great many served by the glass. Perfect for sampling top wines where a bottle price would be toppling the budget. But where Must really gets interesting is across the room in the bistro. One bite of chef Russell Blaikie’s twice baked soufflé and you will understand why Must has gained it’s strong reputation in fine dining. The menu changes seasonally but Blaikie’s French influenced, contemporary cuisine is always first rate. The options are consistently appetising with dishes delivered flawlessly. Have your knowledgeable waiter pick out a grape variety that compliments your meal. Back on the wine bar side of the establishment, you can choose from a selection of bar snacks with a difference: oysters, chicken liver parfait and duck rillettes are favourites.
